Here at Blondie&Co., we really love (1) food and (2) things that are pretty, so you can imagine our delight at Instagram’s latest attractive food trend, jelly cakes!
Also commonly referred to as “Island Cakes”, these creations are part jelly mould and actual cake, and often take on the appearance of island landscapes (hence the name), though there are a few other variations.
Most jelly island cakes are made with blue-dyed gelatin for the ocean, actual cake for the islands, and a whole bunch of other delicious goodies for the extra details, such as shells and coral.
While the jelly can be a bit tricky to get right (think colour, flavour and maintaining the shape as you take it out of the mould) the result is a phenomenal 3D effect that really brings the cake to life.
What really makes the cakes stand out is the incredible attention to detail many bakers are adding, like mountain typography and underwater creatures and corals.
